Pastor is what I always use. Cattle won't eat dying nettles and docks so there is plenty of choice for spot spraying them. Bigger problems come if spot spraying ragwort.

The instructions will almost invariably say keep stock out for X days, actual risk is minimal in reality especially doing small areas dominated by weeds they won't graze among anyway.
So mainly you want it as effective as possible, pastor is as good as any.
There is a slight danger of toxic weeds such as ragwort becoming more palatable as they die back - this is far more of a risk than ingesting a trace of spray.

Blaster or Grazon, few other products are approved for knapsack use, there is one other for certain but can't remember its name.

You should not spray whilst animals are grazing, not that you will manage to poison them but if they eat the foliage from treated weeds, the product won't work at all well, keep them out 7 days- grassland products are a tad hit and miss as it is.

Where you have mature granddaddy Thistles, Docks and Nettles products like Grazon are the best option, though don't be surprised if you need two applications to be rid of them- have seen nettles in particular survive full rate glyphosate in the past.

We use Pastor on all our parkland, but only spot spray. Stuff smells that much the sheep keep away from it.

    Never had a problem.

Pastor is a bit pricey, you can use vivendi which is a lot cheaper
